Zereshk Polo, Persian Sunshine Rice with Chicken

Zereshk Polo is the ultimate choice for those who just want to make something delicious and simple yet classy. Ingredients

  • Rice: 400 gr 450 cal
  • Chicken breast or drumstick and thigh: 1 for each person 250 cal
  • Saffron: Be generous in using saffron 1 cup, brewed 4 cal
  • Dry barberries: 4 tbsp 89 cal
  • Vegetable oil: 5 tbsp 600 cal
  • Salt and pepper: 1 tbsp
  • Ingredients for the Chicken:
  • Bell Pepper: 1 medium 30cal
  • Onion: 1 large 60 cal
  • Carrot: 1 medium 40 cal
  • Cinnamon stick: 1 6 cal
  • Orange Juice optional: 1 cup 111 cal
  • Tomato Paste optional 2 tbsp 26 cal
  • Butter: 20 gr 143 cal

Instructions

  • Step One: Use either the draining method, or the simpler one to cook the soaked rice.
  • Step Two: Cook the chicken with onion, bell pepper, cinnamon, salt, pepper, saffron, and water for 20 to 30 minutes.
  • Step Three: stir the dried barberries on oil or butter, with sugar and salt.
  • Step Four: Fry the cooked chicken well until they look golden and add brewed saffron, orange juice, or tomato paste to it. (If you are a vegan/vegetarian, marinate tofu or halloumi cheese with saffron and verjuice, then fry it.)
  • Step Five: Put 10 tbsps of cooked rice in a bowl and combine it with saffron. Then garnish the rest of the rice with saffron rice, barberries, and sliced pistachio. Enjoy!
